What we know so far

Santiaga is a Mexican fine-dining room in Mahatun Plaza, Phloen Chit. Chef Billy Bautista opened it with the founders of La Monita Taqueria.

The format is Cantina Mexicana, a tasting menu with tequila and mezcal poured to go with the courses. The Purification menu is about ฿2,200. Coverage of the room says the tequila it pours is additive-free.

Two of the cocktails come with insects. The Bamboo Worms is mezcal, bamboo-worm miso, Champagne, coconut, and ginseng tea, with a bamboo-worm mayonnaise on the side. The Bee Larvae is a julep of roasted bell pepper tequila, vermouth, watermelon, and mint, served with bee larvae in basil mayonnaise.

This is a sit-down dinner, not a place to drop in for one pour.
